Layered Fruit Agar Agar


Have you ever woken up with the thought

"Omgosh, please tell me I didn't do that yesterday...that it was only a dream, right?"

I did. This morning actually.

Yesterday was the last day of my first full-time job. It's been 3 years. So I did the ugly cry in front of the now ex-colleagues (some looked worried and probably wondered if I'd lost it). I had envisioned that would happen hours before the actual incident. They call it the self-fulfilling prophesy. I call it overactive tear ducts.

But the good news is...I'm about to jet-off and start my holiday now so I can pretend I have a short term memory loss. It's a between-job holiday. Or just an unemployment stint.

I will leave with you the simple recipe for the fruit layered agar agar in the meantime.

And see - I told you I was going to incorporate agar agar into my everyday diet!

Fruit layered agar agar
  • Fruits of your choice (try not to use kiwifruit, pineapple and papaya as they have enzymes which may prevent the agar from setting).
  • 4 cups water (or you can use juice - I'd probably use lychee or apple juice next time!)
  • Honey (to taste)
  • 2 tsp agar agar powder
1. Bring the water with the agar agar powder and honey to boil.

2. Pour a thin layer of liquid from the above step to your container of choice before layering the first layer of fruit (in my case strawberries)

3. Once you add the first layer of fruit, pour another layer of the agar agar liquid on top - let it sit for around 2-3 minutes before you layer on second fruit of choice.

4. When done with the layering, place the container into the fridge for around 2 hours!

    yeah me too. i keep wanting to make everything with agar agar these days. ;)

    sweet_tooth: no, it's not. agar agar is made from seaweed whereas gelatine is from animal collagens I believe. They're rather different in texture too.

  8. Agar-Agar is simply awesome!
    I found about it this year (though it was in my cottage cheese and what not for many years...), and I really like it. It's great made with coconut milk. Yum.

    The last time I made it, though, I used apple juice. DH said it tasted like apple sauce. He was right... Anyway, I thought it was a waste of agar agar, because it's not cheap and I needed to use a LOT of it with the apple juice. You need to add more if you use something acidic.
    Just wanted to share my experience, and to thank you for the eye candy :)

  9. @Anonymous: Thanks for the heads up...I didn't know you need to add more powder with apple juice! You're right, agar agar is NOT cheap - I bought a packet (~70g) for aud $10!

  12. Vivienne and anonymous, you can buy agar agar for less than a dollar at any Asian grocery stores. Use Lychee juice. Also sold in Asian grocery stores. It's canned fruit. You dump or eat the fruits and use the juice.

  15. Usually agar agars can settle and solidify when left out in the open air for 15 to 20 minutes. Do you think this recipe can settle in 15 to 20 minutes in open air too?

  16. Hi Anon: Yes, I think the agar will solidify if you leave in room temperature for 15 mins (in fact, after a few minutes you can see if gelling up)...but I chuck into the fridge because it's faster and hardens a bit more quicker. Hope this helps :)

  18. Hello! This looks amazing! I've never worked with agar agar before, and I've never used honey with gelatin... can anyone give me an example amount of honey to use per teaspoon of agar agar? Thanks!

  19. Hi Anon: You can get agar agar in most asian/japanese grocery stores! If not, try online shops :)

    Sunflower: For the amount in the above recipe, try 2 tbsp of honey at first, and taste as you go along (when boiling the water with the agar and honey).

  21. I used a packet of agar agar powder that had vanilla flavor added to it, I think it was meant as a ready to mix dessert just add sugar and water. Anyway I made it according to package directions just subbed some of the water for lychee syrup from the canned fruit and it geled beutifully except my layers did not really layer they kind of floated to the top and mixed together. I did not notice any firming during the 2-3 min wait between layers, is that normal?
